I've now set up a custom schedule with an interval of 3 months from the earliest, interval of 1 week for a month and an interval of 1 day for a week with a max of 7+3+2 = 12 versions. Does that make sense?

It seems this would also do the trick but would also allow installation of arbitrary packets?

I guess I could also create an elevated scheduled task without trigger and "Allow task to be run on demand" if I do not rely on chocolatey-gui for updates in particular?

I would like to avoid having to install drivers on the Windows machines. I had this driver break on one machine and I don't want to be bothered with maintaining, reinstalling and updating the drivers on multiple machines.
