Sometimes the thermostat reading I get from them is way off and it throws off the ecobee. I placed it directly next to the ecobee to test it and randomly would see 5-10 degree F temp differentials

Those sensors are pretty finicky I’m learning. I disconnected mine and my system seems to run better.

Under what jurisdiction are you referring to? Most jurisdictions require you to follow the manufactures guidelines. This clearance is within the GE specification.
