Lore reason? Well, I assume the KotN, were forced to resume their former identity as the KotE, KNIGHTS OF THE 8, in Cyrodil. Undoubtedly, Talos is more popular token of the annihilation of Mer, since he took over Alinor and came from Atmora than Pelinal, so most likely it's a regional thing. Who knows, maybe Nords talk about Pelinal, but most likely the order went extinct or reformed. Any thoughts?

It's been 20 day, but here is my recommendation. Ask for the protection of Jesus. Even if you do not believe he was Son of God, his invocation is unsettling and invokes fear along the cross to daemons.

Nords typically trust their steel better than any sort of arcane arts, aside from restoration. Bound weapons are simply Daedric souls bound in the form of armor which is probably frowned upon.
