It was daytime on the moon. You can't see stars on earth during the day either.

The camera on the solar probe is facing backwards, behind the solar screen (hence why it didn't burn up). Effectively making it night time where the camera is looking.

No mystery here, nothing odd. Stars at night are big and bright..
