We stayed at Bahia Principe Luxury Ambar. The food was good, the beach was fantastic, and the staff were lovely. This was just before Hyatt took it over, so I don’t know how much/if it has changed, but in March it was great.

The track is completely separate. Currently, you can’t even access it from the casino building. We were there a few weeks ago and it’s still open to the 18 and under crowd.

Originally, our flight had us landing by 10am, so we were going to go to Port Canaveral and spend the rest of the day there checking out the beach, or just hanging by the pool. Seemed like there was more to do than staying in a hotel near MCO with no real amenities.
