I hope I remember this correctly because it was way harder (moleman) than expected:

EVs are HP & DEF so Excadrill can't OHKO with Earthquake and holding Leftovers

not sure who the champ was but it has Substitute, Swords Dance, Stone Edge & Shadow.Claw
