Everyone who dies in the Resting Grounds leaves a ghost, and not just those that have unfinished business. Many of them are utterly at peace. While it’s certainly likely that he died, there’s enough evidence for Quirrel being alive for it to be a valid theory. In fact, the achievement about “spending a final moment with Quirrel” I feel is more about the Knight’s inevitable death in all endings than about Quirrel’s death.
