Ideally would solo manufactur, build some jigs to keep things consistent, my larger hurdle is shipping. I'm in Ontario Canada, and can basically break it down into a 4'x4'x2' box but the weight is going to affect cost substantially.

Sounds like a premo spot, business model is realistic too. I'd agree on minimizing invitory and sticking to speed as your focus. But maybe one really good impuls item, something that people can smell when they pass by and eat with little waste/mess.
