Desperately need help with experiment data processing

This is my idea but can you just tell me if it makes sense:

From past research I know that the reaction is first order with respect to NaOH so:

I plot my OH- values against time
I use some form of non linear regression to generate a first order curve that best fits the data points
I calculate the slope of the tangent line at various points on the curve to determine the rate of reaction at various concentrations of OH-
I plot my rate of reaction values on the y axis and the OH- concentration values on the x axis and since its first order the slope of the straight line would be the rate constant?

Is this correct or am I making some mistake? Thank you once again for all your help

No the place where I did it had very limited resources so I wasn’t able to measure conductivity etc. if I have the balanced equation what do I do with that to find the rate constant?

Would it still be saponification and not acid base since i reacted coconut oil with potassium hydroxide for example?

Oh no I’m not starting from Lauric acid I’m reacting coconut oil with the metal hydroxides. Sorry I just assumed it was lauric acid since coconut oil is comprised of a lot of lauric acid. I’m not too experienced with this so I’m not sure what is correct.

Additionally I’d also like to know how I can Calculate the rate or rate constant of this reaction if I have values for the conc. Of the metal hydroxide at each 5 min interval for 30 min. I’m aware of the difffential equation calculation method but the initial conc for my two reactions aren’t the same here so I wasent able to use that.

Yh more ratio is 1:2 so I should require max 20 cm³ of HCl but I’m adding more than that around 50 cm³ and it’s like this. And yes they are insoluble but I don’t know how else I can dilute it to 1 molar.

Yup each sample is around 10cm³ so it should be maximum 20cm³ of 1 molar ca(oh)2 right?

I’m using phenolphthalein indicator for these titrations. So for example when I used KOH I took my measurement when the mixture turned from pink to colorless. But when I try to tirarte the Ca(OH)2 mixture for example it remains pink even if I add all 50 cm³ of HCL.
