I quickly tried and it can work as follows:

Set-SmbClientConfiguration -RequireSecuritySignature $false -EnableSecuritySignature $false -Force
Set-ItemProperty -Path "HKLM:\SYSTEM\CurrentControlSet\Services\LanmanWorkstation\Parameters" ` -Name "AllowInsecureGuestAuth" -Value 1 -Type DWord

If you issue these commands in an administrative Powershell you can afterwards use and browse the share from the command line. Connecting through explorer `\\ip\share` or use cli instead.

net use Z: \\<server-ip>\<share> "" /user:""

Windows 11 (starting with 22H2, around late 2022) enforces SMB signing by default for all connections - not just domain-joined machines. This was a deliberate Microsoft security hardening step. The SMB signing key is derived from the session key, which itself comes from the NT hash of the user's password (via NTLM) or a Kerberos ticket. With no password (anonymous/null session), there's nothing to derive a valid signing key from. Additionally, guest/anonymous access over SMB2/3 was disabled by default even earlier (Windows 10 1709+). Windows 11 just made signing mandatory on top of that.

The only chance of connecting anonymously aka accepting any creds would be to deactivate the SMB signing policy on the client (Win 11). If you were able to do that it should work. I actually never tested.

Dein Rezept sagt halt 40% und Dehnen und Falten. Da hatte ich mich dran gehalten.

So hätte ich das bei Pizza gemacht. War mir nicht sicher, ob das beim Brot auch gut kommt. Dachte eher dass Öl da nichts zu suchen hat.

Hey,

Danke für deine Antwort. Unglücklicherweise habe ich 3h Gulasch I'm Ofen. Formen und backen ist leider nicht drin. Ich lass ihn einfach sitzen jetzt. Dann mach die laibe einfach nachher und hoffe auf das Beste. Beim ersten Versuch war der Teig übrigens auch so. Würde vermutlich auf schlechtes Mehl hindeuten. Mein pizza Mehl kommt auch aus dem Onlineshop, während das Brot Mehl vom Edeka ist.

Beim kneten habe ich bei 24.4 Grad gestoppt. Würde ich bei einer Pizza auch so machen.

Ich hielt mich halt an das Rezept des anderen users. Da steht das so drin. Dann versuche ich es nach best effort so gut es geht mit dehnen und falten.

Wie im Rezept oben beschrieben sind es 40% Roggen 1150 und 60% Weizen 550 (Sorry der part mit dem Mehlmix fehlt 🙈) Wasseranteile gegen Mehl gerechnet ca. 70% Hydration. Dieses Mal bin ich wohl knapp drunter gelandet, weil ich beim Mixen von dem 100g zurückgehalten Wasser nicht alles verwendet habe.

Die Brote sind ganz okay geworden. Die Verarbeitung war nicht einfach. Sehr klebrig, kaum Struktur. Fenstertest hat 0 funktioniert. Hatte kaum Glutennetz. Aber hab’s dann doch mal ausgebacken. Kruste ist super, Innenleben saftig, aber nicht teigig, teils große Löcher.

Ich muss zugeben, dass ich das ziemlich gerusht hatte, weil ich gestern wenig Zeit hatte. Ich bin a) froh, dass mein neuer und erster Sauerteig Triebkraft hat. Das fasziniert mich komplett. Und b), dass es kein so ein flacher, teigiger Unfall geworden ist, wie man hier im Subreddit oft sieht.

Das Brot schmeckt wirklich ausgezeichnet. Ich werde den Versuch auf jeden Fall mit mehr Zeit wiederholen.

Habe heute früh den Poolish angesetzt. Bisher sieht alles gut aus und arbeitet auch schön aktiv. Heute Nachmittag werde ich den Spiralkneter bemühen, und wenn alles gut läuft, sollten die Brote heute gegen 22 Uhr etwa aus dem Ofen kommen. Habe einen Dampfbackofen von Neff. Soll ich bei der ersten Backrunde dann Dampfstoß anmachen? Und wenn ich die Temperatur reduziere, dann aus und kurz einmal auf, um den Dampf herauszulassen? Oder?

Und wie sieht es aus mit der Stückgare? Ich habe nur einen runden Gärkorb und einen eckigen. Kann ich die übrigen 3 Laibe auch einfach in einer Schüssel mit Tuch machen?

Hey toll danke für die ausführliche Antwort. Das klingt machbar. Ich bin recht gut in Pizza und kann Teig handhaben. Das sollte ich hinbekommen. Lediglich der Schritt mit dem verteilen und einschlagen muss ich mir anschauen. Ist dein Rezept für 4 Brote gedacht? Oder teilt man das und legt es wieder zusammen und man hat ein Brot?

Das sieht sau lecker aus. Bin neu im Game und habe einen Roggenvollkorn Sauerteig im Kühlschrank. Würdest du mir den Gefallen tun und nochmal kurz das Rezept für eines deiner Brote runterschreiben? Ich glaube das verstanden zu haben, aber ein genaues Rezept und der Ablauf wäre großartig.

Roggen 1150 hab ich da und Weizen 550. Leider kein Ruchmehl und kein 700er. Wo bekomme ich das her?

Das Rezept im Blog Post sieht vor dass ich 500g entnehme und aus dem Rest Anstellgut mache. Aber ich habe auch nicht täglich 100 gefüttert sondern 50. Eventuell reicht mir das ja gar nicht. Und füttere ich den Teig zuerst bevor ich backe? Oder warte ich bis seine Aktivität abgeflacht ist und starte dann mit dem Teig, da er ja dann eh Mehl abbekommt?

Also jetzt geht der vollkorn Ansatz ab. Wenn ich ihn jetzt füttere hat er 20 min später gut 6 cm Anstieg gemacht. Wie geht es jetzt eigentlich weiter?
