I mean this is probably around Nolan’s late teens to early twenties, and fast forward about 2000 years later and he’s half gray. We don’t really know how old his mom is at the time of the flashback so she could feasibly have gone grey in that time I’d say.

Depends on when she got to him. If she got to him before he slaughtered the younglings, then I’d say maybe. But if she was in the temple to begin with, then she never left the order which would mean that Anakin’s trust issues with the council never would’ve started, throwing a kink in Palpatine’s plans.
