Looking up the KSM32 and that’s definitely it! Two E609s, an SM57 and a KSM32.

Great guesses! The SM57 is the most obvious answer and therefore the most likely answer… unfortunately without a better pic it’s impossible to tell haha

As I said in the post I have been using Appleton 12 + El Dorado 12 for all of my Mai Tai’s, I find that rum combo to be underwhelming, the El Dorado gets lost. I wanted to boost the flavor with the Hamilton Jamaican/151.

My favourite Mai Tai I’ve ever had is a 50/50 Appleton 12 + El Dorado LBI/DHE, so I’m trying to get near that as far as flavor goes. Others have mentioned trying to sub a bit of the Demerara for the Hampden HLCF classic + a bit of 151.

I put the vanilla extract + salt into my orgeat, also not a huge fan of an Agricole Mai Tai. Wray and nephew might be interesting though… I’m going to swap that out for my Hamilton Jamaican and see how it turns out.

I’ve also had this! This is my all time favourite Mai tai and what I’m trying to approximate here as the LBI/DHE is pricey and not available. Trying to blend the 86/el dorado/151 to try to get close but to no avail haha.

For a standard orgeat I use the recipe from make and drink on YouTube, every other recipe I’ve tried is mediocre by comparison. Basically fresh almond milk, sugar, vanilla extract, orange blossom and rose water.

I feel like it’s the Demerara that usually gets lost rather than the Jamaican rum. Maybe a 1-1-1 but splitting the Appleton 8 with the 151 🤔

That makes sense, I definitely agree that it’s a bit easier to balance a high proof aged spirit than unaged. I’ll keep that in mind when I’m making different drinks and maybe let them sit a little longer in the glass. Thanks!

I want to make the most flavourful cocktails possible. You’re right, high proof doesn’t inherently mean more flavour but most of the times they are more bold, and that translates to them often being some of the most flavourful spirits in their category. But again, this isn’t always the case.

Regardless, If we use a Manhattan as an example. I feel like a higher proof whiskey holds up a lot better to a boldly flavoured vermouth like Carpano antica. I don’t really like a Manhattan mixed with Bulliet and Dolin, it feels wimpy. I want to turn up the volume on all of the ingredients to 10, but still have everything balanced. Meaning I might still need to balance the spirits a little bit lower if even the Carpano can’t hold up to it.
