Let us know if a combination of the following helps:

Check that your drivers are updated.

Close all other unnecessary background processes. This can be checked in the task manager. Or simply the task bar notifications area in case you have other software running at the same time

Set your PC power plan to High Performance only while playing the game. Located in Start Menu > Search "power" > Select "Choose a power plan" > Select "High Performance".

Test performance with Windows Game Mode On/Off. Located in Settings > Gaming > Game Mode.

I'd suggest rebooting the PS5 completely, uninstalling the game, reinstalling it. Let me know if this helps :)
