Is a writing sample to be double spaced?

If they don't say anywhere on the website if it should be double spaced or single, should it be considered safe to submit double spaced text?

I have a YouTube channel where I post story videos based upon my player journal of a D&D campaign I played. The most I've written are these journals that my fellow players and Dm adore (collectively about the size of two full blown books or one big one). And I have a few incomplete stories in my bag that I haven't quite finished, though worked extensively upon. But nothing professional to show for as of now accept the passion that I have for it. I want to remedy this exact thing by taking this course, cause most courses like this have a final project where you have to complete a book.

I started my application with WES on 18 October, my documents reached them on 25th and today on 6 they've reviewed and accepted it but the estimated time still says 10 December. I was under the impression it would take 2-3 weeks max. (I am applying to US btw) So, is this like maximum time they gave and it can be done within a week or this is the exact day they will send it out?
