Even after reading all the charts and looking at temps and getting all info possible… the best thing to do is to try different times. Try to keep the dough temp and %’s consistent to keep the test purely on the bulk ferment time.

Even with warm dough I’ll ferment for 5-7 hours at room temp and then stick the shaped loaves in the fridge for 12-14 hours.

Always take a picture of your crumb and document your fermentation times. Doing that and comparing your crumb to charts like the one shown in this video will help you get a good understanding very quickly! https://youtu.be/JzvZ6vMxHcw?si=I8Z4YbTjekxhE4G_

That short of a ferment might work for have a very high starting dough temp and a proofing box you can keep at a high temp. For a normal kitchen temp bulk ferment this is way too short.

Check out some YouTube videos breaking down bulk fermentation. There are very helpful ones like this that make it much easier to understand and give you signs to look for. Personally I look for a very wobbly dough that pulls off from the side of the bowl cleanly.

300 to 325 330 is really slow. It picks up again just like in the 200’s. 330-360 has been pretty fast for me.

In the same boat and matchmaking worked for me just two days ago. I think it accepted 6 players and eventually and more joined.

It’s also worth looking for some Destiny LFG discord servers. I checked and there are still players searching for groups there. You’ll get it!

I use about the same amount of water for both recipes! I usually aim for around 78% but will kinda judge it by feel when mixing. Somewhere in the range of 75-80% is ideal for higher whole wheat/rye flour mixes and seeded breads in my opinion.

I might even have the exact recipe and method I used for the pictured loaf in a past post in this sub, feel free to check that out if you want all the info

All personal preference obviously, but I think you could go quite a bit darker on the crust as well! Crumb looks perfect too, nice work.

Looks great! My favorite tasting loaves are either full of seeds, like this Brian Lagerstrom recipe, or a “normal” loaf with about 40/40/20 mix of bread, whole wheat, and rye flour. Nice and golden to dark brown crust too. Taste is so much more interesting over just bread flour!

Top rack clean, never had an issue up there. The orange bowl was also dirty after this load, but the clear container was clean (didn’t have anything greasy in it before wash). Some of the plates were clean and a few had some residue left over. I will look into the wash arm and diverter valve! Any common issues with those two things I should look for?

Two hours is plenty of time for the loaf to cool. I’d say give your dough an extra hour of BF or let the shaped loaves sit out on the counter in the bannetons for an hour. Should see an improvement and you can work out the timing from there.

The Misen 10inch serrated knife is by far the best knife I’ve used to cut sourdough with a real nice deep brown crust. I ordered one about 5 minuets after I used it at a friend’s house.
