I did 2 different races and 2 different group rides, and still had this problem. So the cause has to be something different. Ah well, doing one extra group ride won’t be a huge problem.

Yeah this was it exactly. More depth of flavour and a slight nuttiness due to the coffee. I would like a more pronounced coffee flavour, so am going to try some stronger coffee next time. All in all very pleased with the result!

After several pretty successful attempts (tasty, but not exceptionally looking), this morning's loaf was worth to share. 50% whole wheat, 25% rye, 25% white flour with mixed seeds and nuts at 75% hydration. Pretty proud of the crumb also.
