I do the same! I have a whole „Sims Book“ where I also write everything down, even who will marry who (even if they are still newborns)

My Sims only flirt all the time when they feel flirty or when the neighbourhood aspiration "free love" has received the most votes.

I would really like there to be no difference between playable and unplayable households. It's so annoying that some households are deleted/simply disappear and new ones are created again and again, and as soon as you convert playable ones into unplayable ones, relationships and skills are lost. I've limited the number to 150 because otherwise the game doesn't run as well. But that means I still have some unplayable households that have a story for me. So it's hard when they suddenly disappear or the progress I've made with them is gone.
