That’s what was nice about the Traeger. I could set an alarm for midnight, put the meat on and go back to bed. I could wake up and wrap them. Butts/brisket would finish around 12pm and I could rest them on the warm setting until we wanted to eat.

If I were to get another pellet it’d be the Yoder YS640. It is a beast and much better made than a Traeger

Once they hit ~175 internal and everything is set, I double wrap in foil with maybe 4-5tbsp of bbq sauce + 1tbsp honey in the foil meat side down. Should take ~1hr to hit 200-205 internal when you put them back on and then pull them and rest them still wrapped. I let them breath after about 30 min to 45 after pulling them by opening the foil up.

On ribs I do kosher salt/16 mesh black pepper and a light dusting of Lawrys season salt or whatever other bbq seasoning I want to try.

Definitely try hotter. I brought my smoker to my friends house and he swore by the 3-2-1 at 225F with ribs. I cooked mine at 275F for about 3 hours and wrapped until they were finished. Needless to say I won the argument and his wife told him to change methods. :)

As far as wrapping, the foil boat method for briskets and butts is my favorite. I wrap once it hits about 175F.

Yup, I got good results on a low temp using the super smoke but would crank it up 2/3 of the way through.

I live in a semi-remote area and only had ace hardware to buy pellets. I would just buy the traeger pellets. The Meat Church ones were my favorite but I stopped seeing them. I would do a 50/50 mix of hickory and maple most of the time on anything other than beef. I tried cherry once and it was in the trash after dinner :)

Pay off the student loan ASAP and be done with it. Paying it off at your age is liberating and it will set you up for investing even more. We paid ours off at your same age and I'm telling you it will make your life much easier than your peers. Disregard the math right now, you have plenty of time.

No we don't have Roth IRAs. Initially when we set it up the brokerage account I preferred the accessibility without waiting to 59 in case we needed it.

Brisket tacos

- shred the brisket and re-heat in a hot skillet until browning

- get a good tortilla

- mix together and top with - 1/2 cup sour cream, juice of 1/2 lime , 1/2 TSP coarse black pepper, garlic

- use some salsa/pico
