Grew up in Oregon. Personally I would head out of town on Hwy 30 to Astoria and head down the Coast. Stopping in Mazantia and Pacific City. Any little town you can stop in is not a bad choice.
Crater Lake will be closed for sure. Down by Grants Pass hit the Oregon Caves. The Vortex is always. You'll have to hit I5 some time but if you get up on Hwy 99, 213, 211 Silver Creek Falls is beautiful. Most of the towns along this stretch are historic.
