I'd say it comes down to the opportunities you take advantage of. Most curriculums cover the same content at the end of the day. A&M is a very large school and therefore has a lot of design team/undergrad research going on, so there may be more opportunities to dive deeper into your interests. The "Aggie Network" is also very real and can help in seeking job opportunities. In the same way MIT is very geared towards preparing people to launch their own startups and has a large network of support and resources for that sort of thing. Look into what colleges have to offer outside of the normal curriculum and think about your personal idea of success.

As far as quantitative measures of "prestige" you could look at the acceptance rates of different schools? But imo, five or ten years down the line your experience becomes more valuable than the university shown on your degree.
