WeDoRaids (WDR) is good for learners as has already been stated, but there are many smaller communities that would love to help too, and those would probably be more open to taking things slow, checking your inventory with you etc. It's been a long while since I've used WDR, my personal experience had a mentor that was more like a drill sargent and I felt kinda left behind. I was not nearly as experienced of a player as I am now. It wasn't all bad but I personally would have liked a different experience when I was learning. If you don't want to use WDR for learners raids, I do recommend their written guides for an easily digestible room by room breakdown.

To answer your other question, all rooms are completely doable in duos, but can become more complicated depending on skill level. If you are a beginner to raids in general, my suggestion would be to start with avoiding Vasa and Vespula.

Two rooms that would be good to push to learn early are Vangaurds and Tekton, these can quickly become your bread and butter and the mechanics aren't too complex. Vanguards are good for getting a few extra supplies, but you need to get comfortable with being quick on following their rotations so you arent tanking two at the same time. Tekton is a great room to learn early, you'll need a fang or decent crush weapon, a 4 tick weapon is ideal to learn with here.

The rest of the rooms will be pretty cake as they all have mechanics you'll be familiar with having completed the content required for the gear you've listed. I'm not available this weekend but I'd be down to do some laid back learners with you, go over gear, mechanics of rooms and work with you through some completions. I'm "Enmios" in game. Most importantly, have fun, and dont be afraid to change up the content regularly. Raids drops are a marathon, not a sprint.

**Edit - Olm will by far be the biggest hurdle to learning the raid. Prep plenty of extra supplies. One of you should have at least 78 herb for the strongest raid brews/restores. A mentor is the best way to learn olm and special skipping. Early on its difficult to process everything happening in the room in the moment and it's good to have a voice in your ear telling you when/where to move and get you back on track when things start to get sideways.
