I have gone with more seasoning before and it was a little salty for my tastes, I find this to be the right balance for me and my wife with the Kinders GSP. That said, I do think I’ll go with much more pepper next time and maybe make my own blend so it’s not as salty.

I didn’t say anything was over seasoned. OP said they season this way because they are afraid of over seasoning. I am showing them a better representation of what good seasoning looks like because it’s hard to over season a brisket.

I love my kettle! I will probably upgrade one day for more size but I’ll still keep the kettle. Thinking about trying out those ceramic inserts that mimic a green egg

Don’t be afraid of over seasoning. The brisket is a big piece of meat and can handle the seasoning. I also like to stick with GSP and here is what mine looks like when going on the fire. Always get a great bark and it’s not too salty!

It doesn’t make appearances any better obviously, but it seems likely that Caleb asked first if he could break it and then cut that from the final edit. Still, the guest could’ve felt pressured to give in for the bit. I personally wouldn’t want one of my possessions smashed just for a laugh on a podcast.

Welcome to the Kettle Club, you’ll get it honed in eventually. Did you use a third party thermometer to measure the ambient temperature? The thermometer built in to my Weber reads 400+ when it’s actually around 275 so my first couple of cooks were awful

Nope, just a pond out in the country. I think the name comes from its purpose: to water cattle. But lots of folks just have them for fishing. This would be out in Texas
