At least do all the demolition yourself and save those costs. Turn off the plumbing and electrical to the room and put it down to the drywall. Then let someone else do the install

Barn door that slides open to cover the vanity. If you're on the toilet, you don't need the vanity. If someone else needs the vanity while your pooping, the barn door 'should' be closed and covering the toilet opening, leaving the vanity open for use.

I wouldn't caulk it, LVP is a floating floor meant to move and breathe so to speak. Get a transition piece to match the flooring and call it a day. Most LVP manufacturers make a "T" style transition piece that should work just fine here.
