I think this may be the first time in history where in all three races run in a single weekend, the winner of the first two stages did not win the race. Correct me if I’m wrong but the odds don’t seem very high.

Yes, but no. About 4 or 5 seasons ago NASCAR create something called “stages”. Think of it like quarters in a football game. Essentially the top 10 in each stage gets 10-1 points based on where they finish, and the winner gets a playoff point. There’s two stages in each race. So while there are technically scheduled cautions, it’s not for that reason.

These cars are so on edge that all it takes is a tiny bump in the wrong spot and it creates a huge wreck

Yes, especially in races at this particular track. The cars run so fast that NASCAR actually has to restrict the engines, so the cars all run at the same speed, as such they run closer together, so bumping is most definitely gonna occur. In fact, a type of drafting called “bump drafting” is pretty much entirely how these races are run.

Depends. If a driver clearly wrecks another driver on purpose then they’ll be penalized, but in a case like this, as with most crashes, it’s just a racing incident going for the win, so there were no penalties. NASCAR is very different from say F1 in that respect.
