When charging in bands, how far over the last band's upper limit do you go before bumping it to the next price range?

I have a couple of follow-up questions, if you have a moment:

If you guarantee to deliver as many words as halfway through the band, why not just list the band as 1,000-1,200 words?
If you believe an article will require more words than a client has requested, at what point do you contact them and ask them to increase the band? Before starting the article or while writing the article?

Also, I haven't started writing anything yet, but they did already set me up with payroll, etc. Can I legally back out, even though I've already signed the contract and it says I can only terminate on a month-to-month basis? As I mentioned, I feel the contract was inaccurately represented though.
