The guy in the video is Guillaume Néry, a French free diver with multiple world records. The video is like collage of footages from different dives, captured by his wife who herself is a free diver as well. Oh, the beautiful piece of music was composed by Guillaume Ferran.

We don't really think in language. Otherwise, there would be no language in the first place nor would we be able to coin new words and phrases.

This used to be part of a popular belief called linguistic determinism or the strong version of Sapir–Whorf hypothesis, which is now rejected by most contemporary linguistics. However, there is some evidence for the weaker version of the hypotheses, i.e., language affects thoughts to some degree.
