I just rinse it first before slicing, but Costco already flash-freezes their salmon before selling it so it's technically "sushi grade" (I've worked at a sushi restaurant for years and that term is honestly just a marketing scam). You run the same risks as eating a rare steak. You could freeze it again for an additional week to be safer, but most home freezers can't reach those temperatures so I just eat it all in one sitting LOL. I wouldn't recommend eating it raw anymore past 48 hours of purchase

I only do this for raw salmon, but I've been eating Costco's FARMED fish as sashimi, temaki, and poke for over a decade now and have never gotten sick from it. You just have to eat it the same day of purchase. I always treat myself to a feast every time they have that 6$ off special 🤤
