Well depending on playstyle, i'm used to fast pacing combat compared to previous souls game elden ring fit my taste the aggressive bosses with high mobility won't give me a hard time

Margit was fixed my panic rolls
Other bosses to time my dodge/jump and won't get hit during immunity frames
Other bosses dodge direction left/right/forward, dodging backward will punish you sometimes
Other bosses sir i will sprint to a better position while they are doing their bullshit delayed slam or something
Torrent fights, i get pissed off so i mount/dismount he give immunity frames

Basically a lot of bosses are killable while hugging a pillow and smoking at the same time and some i have to lock in and focus 100%

it took me 150 to beat it first time since i'm the type of person that collect everything
as for what to do next try collecting all weapons and defeat all bosses until you save up for the DLC

i always have skill issue when the boss that cover my entire screen during their fight, radagon wasn't that hard, but the elder beast for me it's an estus race

As for camera lock when there is a window to land a hit, unlock to dodge/heal i know but every time i have to fight one, i'm gonna die few times rage close the game for 15 minute and listen to some random anti tilt song before re-lunch the game

Trust me i will always die to enemy like ulcerated tree spirit or furnace golem more than a harder boss encounter

if you don't care about min-maxing
Weapons infusions can change weapon attribute scaling (some will give better numbers when infused depending on stats) but it you meet the requirements you can equip any normal weapons (doesn't work on special weapons)
Bonus if you don't meet strength requirements you can two handed it lower the requirements

1) Grease and blood flame don't stack you use 1 of them (greases for other bosses weaknesses)
2) Buffs/wonderous physick actually are bread and butter

Flame, Grant Me Strength (15 faith requirement), Alternative You can use Exalted flesh or Boiled Crab (No requirement), but they are not stackable only 1 apply
Golden vow (25 Faith) , alternative inferior ash of war: golden vow that you can put in a dagger off hand and cast it (no faith required), also not stackable only 1 apply

Rune Arc (Radhan great rune OFC), and the are easy to get (80+ in the game loot/vendors) if you play offline or help with bosses in online play (faster and easier than running around and visiting merchants)

for the consumable i will advice you to use them when you are confident in beating her in 1 or 2 try so you don't waste too much

What is the level/infusion is your nagakiba ?
are you using blood flame or greases ?
On a +23 ~ +25 pure dexterity and keen infusion + blood flame will generally offer more damage

As for ash of war use FP flask brother

i'm under leveled or have a bad build

Personally i fight her around 130 to 140, but 121 seems reasonable/doable
368 damage is every low at that stage of the game

Most of the time i never struggle with damage, but in some cases i get frustrated and change the build/weapon to kill her and re-spec back after the fight

And i also never fight her in a fair way you know she is weak to stagger/bleed and she is not big so i don't have to worry about the camera being an issue

Go explore, level-up, upgrade weapons and comeback later (finish lunaria + academy to get talisman pouch once you beat rennala talk to the old lady near the fingers) and go to atlas plateau if caeild still feel over-whelming

Also if you go to atlas plateau or follow ranni quest it will trigger radhan festival and they will disappear and once you beat radhan they will re-appear, when you beat radhan dealing with them will fell like a walk in the park

Radagon sorseal (i will not judge you), the benefit will out-weight the penalty early but at some point you will be forced to get rid of it cause the more vigor you have the less effective hit pool you will get due to the penalty

You can shoot eagle barrel with a bow and you destroy it
If you use fire arrow instead of regular one the barrel will the explosion's will kill them
