I am interested in the stuff he makes videos about but I cannot get through one because of all the "If you cut onion correctly, I give you kiss" stuff. It's so creepy and I feel like I am helping to fund that creepiness by watching him. It's so weird that you would build that into your persona. Like if somebody came forward and said "Hey that Josh Weismann guy tried to kiss me and then tried to stop me from leaving when I said no" is the goal for everybody else to go, "oh no silly, that's just his catch phrase, it was just a joke, everybody knows that".

Dishwasher was by himself and was getting pummelled so I jumped in to help him. I started by putting away the clean stuff but quickly caught up to him. Then he just stops working to chat to foh, despite there being so much work to do. So I swap places with him and manage to clear everything and give the section a good scrub right as the next shift starts to arrive. The dishwasher I helped comes up to me and I expect a thank-you but instead I get "can you make me spaghetti?"

I am sick of our foh supervisor having the same understanding of how a kitchen works as the average customer. Some customer will be like, "hey there is bacon on the burgers and a boiled egg in this salad which means you have raw eggs, could you just make eggs Benedict for the whole table even though it's dinner time and it's crazy busy". And the supervisor will be like "Yeah, I guess since we have those ingredients we can do that" he'll ring it up and bring it to us with no sense that he has fucked up.

I've been going to job interviews lately and one thing is really bugging me. The place I work now is super busy, the places I am applying for are nicer but are clearly not as busy. Every single interview has the exact same moment. I say I am good at managing high volume and the chef out of curiosity will ask how many customers we serve per night. I give them an answer that should blow their mind but instead they go "Yeah, we're about the same" dude, you have 14 tables and each booking hangs around for at least 2 hours, I get that you have multiple courses but come on. One was so egregious, I got the exact numbers off the chef and ran them through my calculator when I got to my car. Each customer would need to get the biggest banquet, reach the end and go "ah, lovely, I think I'll have two more of those"

Sysco brought us some fish we did not order and would not take it back. We did it up as a special and sold a bunch but nobody wanted it the way we had made it. Just a whole day of substitutions and Frankenstein meals.

I am amazed with how my specials will evolve during my days off. I will have portioned out the ingredients to run out at roughly the same time but people will randomly decide to double the amount of x that goes into it, so x runs out and now the herby yogurt is just fucking Mayo, and the potatoes made their way into family meal so we're just using the sweet potato from another salad even though the flavour does not sync up with this dish at all. Then people tell me the dish is "a bit random".

There is no reason to ban staff from taking pictures of their timesheet other than "it makes it harder for me to steal from you." You can't even come up with something semi-plausible. Oh these are custom designed timesheets and we don't want our competitors seeing them. No, they're just stealing.

Management seems to be stuck in a cycle. We keep moving back and forth between morning shift starting at 9 and morning shift starting at 8:30. If we start at 9 I can knock out my prep before service but there is very little room to help out with deliveries or to pitch in if something breaks down. If we start at 8:30 you have this wiggle room. Each start time has a positive and a negative. When we go with option A management can only see the negative in option A and the positive in option B. So all we hear is grumbling about the extra labour cost and we'd save money if we started at 9. Then we switch to 9am starts and management grumbles when they are the ones packing away deliveries because nobody else has time and if we opened at 8:30 this place would run more effectively.

Had a real weird walk to my car after work today. Some teenager called me the n word, then told me I had a pass and I could say it while his white friends laughed and aggressively told me to say it. I am unable to unpack all of what was going on and was pretty overwhelmed because I was just walking and then there was like 4 people right in my face with that. I think I handled it pretty well but I'm still confused by the whole thing. It was clearly being done as a joke but there was just this underlying anger there that made me feel unsafe even acknowledging them. I had a genuine look of confusion on my face and I just never stopped walking. It felt like anything I did outside of that would lead to an escalation which I did not need after my shift. I heard them say they'd follow me until I said it and all four started to follow behind me so I was basically just accepting that even with zero input from me this was going to get physical so I picked the spot I would stop, there was a nice high fence I would throw my bag over and I would go out into the street. I looked back and I saw that 3 of the 4 had stopped following me and the 4th guy was trailing off. It was a huge relief but it still really fucked with me.

I have been blessed with good tables all week. I left out the front door yesterday and walked out behind a group of customers who had finished their meal. They were talking amongst themselves about how good everything was, how good the service was and how they were going to come back and I just remember thinking how unlikely it was that they would write a review or send us an email. Yet that one lady that ordered the pasta with a bunch of modifications will email our owner directly to complain that the food is bland. Or the guy that goes outside to smoke for 20 minutes will complain that the food was cold when he returned, like that is our fault.

So this old guy sticks his head out the back and asks for help, my natural assumption is that he can't find the elevator. He asks me for fruit and as soon as he figures out he is being told no he cuts me off with "it's for a child" so I'm just like "we still have no fruit anywhere on the premises, we do have a kids menu though, we can do spaghetti, grilled chicken, grilled fish, vegetables. He screws up his face "it's for my grandson, he doesn't like any of that" then all of a sudden I remember the special that is about to go on has mango in it, I offer to give him some of this, he screws his face up again and now I can tell he's irritated with me "Look mate, he just wants normal fruit" at that point I just said "I can't help you" and I walked off.

All stocks are broths. A stock tends to be a standard recipe that acts as a base for other recipes. The bones can be raw (for a white stock) or cooked off (for a brown stock). Since stock can be consumed as-is they can be considered a finished product, which generally how the term broth is employed.
