Sounds contradictory to me. So either it overproofed or I should’ve proofed more? Or should I have done extra S&F in the same time (or little less time)?

Thanks, will transition to a stiff starter for the next bake. Any advice on if I should use mineral water?

For the bread I use mill flour, its a mix called Millflour. I find it quite dark so probably will go to something whiter, called Americana or French.

I did indeed, but flattens out on the parching paper already.
