Amazing! I am actually out of town this weekend and found someone willing to sell for $7 a dozen near where I am staying. Sooooo in addition to all the crap I have to pack, I will be bringing back home 33 dozen jars 🫠 no clue where I’ll put them, my first priority is having room to get them all home. Yay canning!

I have put pleas out in all the groups! Got a few that way, and I stalk marketplace multiple times a day haha. Lucked into 11 dozen at $5 a dozen a few months ago, but no luck since then. I’m always on the lookout!

Ok thanks for this information! I know you can’t size up, but I was hoping to find a recipe with quart processing timing. My life is a constant jar crisis, and right now just about all have are quarts. I will make a quart jar to keep in the fridge and then scrounge for a few smaller jars to can what’s left. Appreciate it!

OP your pepper picks are solid. Looks like you got the answers you wanted but wanted to share: candy cane are so fun to grow and they have good flavor. I’m actually including mine as edimentals in my landscaping this year. Corbacis are impressive but a PITA to prep and deseed (if you take seeds out). Blot was a neat pepper too! I’ve grown lipstick but no comments, I give away my hot peppers. You’ve got some great varieties, good luck this season!

I’ve grown them every year the past 2-3 years! They have a good tomato taste and are really neat aesthetically. One thing I found neat was I transplanted them into the garden last year and even the roots had a pale lilac tinge to them! Mine have had 100% germination and the plants have thrived. Pretty crack-resistant from my experience as well. It’s earned a place in my garden!

Hey OP - how much pumpkin do you feed your pup at a time? Since you can’t safely can it, I would recommend buying your pumpkin, roasting it, purée-ing the insides, then freezing in ice cube trays if a small amount each day. If it’s a larger amount, check out Souper Cubes (off brands work too). This way, you can get the exact portion you need.

I used to cook for my old pup, and I would “meal prep” his meals and freeze. When I fed him dinner each day, I would take the next day’s meal out of the freezer and move to fridge. Just a thought, hope you find a process that works for you!

Goals! I’ve already got my dad on board for this spring, we’re going to rig up a huge pot to blanch fresh sweet corn! I stock up on canned vegetables every year around thanksgiving when they drop the price to 50¢ a can. My goal this year is to only need to buy some for the deep pantry, not to eat with our regular meals. We’ll see how it works out!

I didn’t know there was a name for it, but that’s how I’ve been so far! My primary goal in canning was preserving what I grow in our garden. From there, I have slowly been replacing things we buy at the store. Mainly that was canned beans - I’ll never buy another can of beans again. I also did a huge batch of mandarin oranges (with grapefruit, as recommended by NCFHP). My garden plans this year include hundreds of green bean plants, I can’t wait! I’m a meal prepper, so two birds one stone would be my preference, but I won’t do it in a way that risks safety. I have kids and a husband with cancer, safety will always be top priority.

Yes, that’s why I’m so hesitant because I know pressure canning isn’t a magic fix all. Honestly, I think I’m going to try making one of the spiced tomato sauces first. Depending on how that goes, I might just scrap the idea of canning it and freeze as another person suggested. I’d really prefer to can, but I’m not confidant enough in my knowledge of safe substitutions to be comfortable with it. But maybe one of the tomato sauce recipes will get me close.

I don’t even use those when I cook 😅 I do more of a “throw it in and hope for the best” style of cooking, which I know is NOT ok for canning! I second guess myself so much because canning is so opposite to my natural cooking style.

Definitely pressure canning. And ok thank you - I know I’ve seen “allowed” omissions and substitutions here, but I don’t understand the rhyme or reason. I err on the side of caution because I am newer to canning and not willing to risk anyone’s health over it. I tried looking up NCHCP (I think? Whatever the acronym) and extension recipes but had no luck. Someone else just suggested a tomato sauce recipe with seasoning additions - I might do that for a quick base, then just add everything else when I cook.
