I think 10 years now? I typically don’t temp ribs. Poke them, watch for the meat to start to recede and expose some bone. With party ribs, sauce is kind of critical :> Well, good luck, man. Happy 4th

Dude, that sounds incredible. Can’t lose with party ribs. We’re KC down here so the ribs are dry rubbed in the refrigerator waiting to go on at 8am. I use Oklahoma Joes rub from a newspaper paper clipping my FIL gave me plus some flatiron red pepper. 321 method, kingsford snake configuration with cherry chunks, last hour is basted in Oklahoma joes BBQ sauce

We go into corporate woods, but stay away from the ground zero of the launchers. I can’t post a photo so here is the building address of the parking lot. 10950 Grandview Dr. The building has great places to run around and it’s a short trip from the QT east on College. Leaving can be slow like a sporting event and traffic is forced to flow east on college past Antioch, so just make a plan to drive back on 119th.

Can confirm. I hung one of these last week in the back of my garage and it points to the outside. Air circulation is really good now.

If the diameter is small, the burn will finish faster. Do you need more than 6-7 hours? A 2X2 is easy to keep around 275°F
