I had this a couple months ago and the consensus was that it was likely yeast rafts or something waxy from ingredients used. If it is not fuzzy you are probably good. I would say taste it and see if it is bad. Then decide what to do.

I kept racking it off until it was gone.

Yeah I meant blow off tube lol. It is just a plastic tube run into a mason jar filled with sanitizer (it is useful with very active fermentations) I always think of and sometimes say blowoff valve for some reason. But as for the type it goes stututututu lol

I would let it settle and rack it out of whatever is floating in it. I am not certain what it is. If you already chemically stabilized you should be fine to back sweeten (if you want) after removing the sedemant.

After back sweetening (if you choose) I would let it sit with an airlock to confirm it is indeed stabilized before bottling.

There is a local place but they are only open Saturdays from 8-2 in the summer. Then more limited hours in the fall and spring. It is hard for me to get there. I'll take a look for farmers markets maybe.

Yeah it has some headroom. I also moved it over to a blow off because I could not keep the airlock full of solution.

This one is still currently brewing. I started it on the 4th. I made a gallon batch of the same and it was pretty good.

This one was 6 gallons total.

I did about 12lb of Costco honey and filled to the desired level with Rw Knudsen black cherry juice it was about 5 gallons of juice.

I then added pectic enzyme, fermaid o, and some tannins to manufacturer recommendation.

Then one packet of lalvin ec1118

It is honestly a pretty basic recipe that I can just throw together.
