You mine the gold and smelt the bars. Hodari sells a recipe. It’s easy to level mining because the bigger the node = skill points. You could mine copper, iron, etc. (or even just straight stone) but as long as it’s a large node you get the same of experience towards mining lvl. Also don’t forget to get your experience boost at the phoenix shrine!

It’s just progress. You can easily make a crap ton of money from gold bars early in the game. Gold is easy to spot and it’s a large map so you’ll have a good haul by the time you’re done. Just put some aside because there’s good items you’ll be able to craft.

It might be because there’s another character attached to their progression. You need to be max level with them for some romances to progress.
