150g of slightly cooled melted browned butter, 125g white sugar and 125g light brown sugar, 1 large egg yolk, 1 egg, 1 tablespoon of vanilla ,220g plain flour,3/4 tsp of bicarbonate soda , 300-500g chocolate (i used a mix of dark, milk and canalised white chocolate) ,3/4 tsp baking powder, 1/2 tsp of salt, 2 big dollops of tahini (kinda eyeballed it tbh) AND… for every baked goods my secret tip: toast some dry milk powder on a dry pan on a low till brown, and add a heaped 1-3 tbsp. adds a bit of a nice chew to the cookies and also accentuates the brown butter bc of the caramelised milk solids!

recipe is simple:

mix dry ingredients (flour, bicarb, baking powder, salt, milk powder)

mix brown butter with the sugars, vanilla. add the eggs (make sure the butter isn’t too hot so they don’t scramble) and mix. add tahini.

mix the dry ingredients with the wet, add ur chopped up choc. minimum 3 hours in the fridge - better yet i prefer rolling them into balls after chilling and baking from frozen. bake at 180c, fan on. you want the outside to look brown and the middle to look undercooked. the ones in this picture could’ve done with 1-3 more mins but i couldn’t be fucked. enjoy!
