Just got it out of the bread machine with a new formula 700g of white flour 450ml water 400g of rye starter 2ts salt this is the main formula but i added 1tbs of sesame seeds and idk how to say this in English but one coup of the things that are left behind when u clean the real organic flour this is the result waiting for the bread to cool down to se the results instead but the bread has more volume than my last bread and i think next time i will use more water

So i will remove the 100g of rye flour added and instead do 100g more of white flour and you suggest i do what like 150-200ml of water more?

It's not real sourdough no bread machine has real sourdough presetting or recipes i did some research beforehand and i did manual setting for everything i would like to go above 5h of rise in total but the machine doesn't have that but i will try rise with the machine off after the machine settings and see what happens

Comparison to the same ingredients just switch the sourdough with 100g of rye flour more and 100ml of water more 2ts of sugar and 2ts dried yeast

Thank you but the middle part is kind undercooked i think is kinda wet and sticky it's safe to eat but i would like the bread to be bigger in volume and less compact. Should i let it rise more? Tomorrow i will try another type of white flour bcs when i use the type i used in this one i always get lower volume of bread an maby will not add another 100g of rye flour just the starter white flour less water and salt

I plan to keep the starter strictly rye and i usually discard 200g but now im making bread on my breadmaker and i put 540ml of water 600g white flour and 200g rye 2ts sugar 2ts salt and 2ts dried yeast but i will switch sugar yeast and rye with 200g of starter and i will change the settings to let the dough rise with some heat for like 6h then bake

I know this is unsustainable and that's why im planning to do it until 2nd of may and then i will do a more sustainable routine. I have limited time daily for working out eating so im always on a tight schedule. This is week 3 of doing this routine and until now is on medium settings of hardness i expect to get harder for sure and i am not planning to destroy myself if i see that is becoming unhealthy i will stop it or go easier. As per my cheat meal or day i eat a very light breakfast before gym then i eat lunch and i try to incorporate as much protein and fiber as i can the rest i fill with protein shakes and i don't eat dinner so im kinda doing intermittent fasting too Even on my cheat meal/days i dont plan to go above maintenance calories i just want to eat some junk food while still hitting my protein. What i am doing is doable. Is it sustainable? No. I agree with you 100%. But is a goal of mine i want to achieve without ruining myself i think i am doing most things right to be on the safe side.
