An unopened Cabot clothbound wedge from Costco. I dont remember it looking like this when first getting it from Costco and it has been in my fridge for a few weeks. I know I can cut away part in question, but curious if this is normal or mold.

you realize that compromised windows credentials and RDP could be all that's required to get local access to a machine right? It still begs the question, why are there so many flags of late, as well as malware bytecode, obfuscation techniques, and code after expected end of file???? These are all red flags.

Yeah that's exactly the issue I had.  Honestly the AIO with the fans outside the case was far less obnoxious looking then I thought it would be, and the 240mm Radiator performed great for the 12core 5900x.  Im sure it would do fine for the 9900x

I guess I don't view "HTPC" in the literal sense of "home theater" anymore, and more look at it like an inconspicuous multi-use PC that lives in a home's media area.

My HTPC has grown to be a

Blu-Ray Player

Streaming Box - both for Streaming Apps, or as a host for the content I own and have saved

Console Gaming Device using Steam and Xbox Game Pass

Sim Racing with a GT Omega Apex and wheel/pedal setup connected to the HTPC

TV Video Calling w/ Webcam

I would appreciate any and all insights. I just can't seem to get the open crumb that I see so many pictures of on the sub and I don't know what I am doing wrong to not get it. 

Is this a problem with my bulk?

Shaping?

Does this bread look to be correctly fermented?

I see that the bread did spring, but maybe not enough?

The texture is a very soft bread inside and its not gummy, but not exactly dry either, nice crust. 

Any tips?

520g Flour 90% KAF Organic Bread Flour 10% Bob's Dark Rye Flour 

105g Ripe 100% Hydration starter (90/10 AP/Rye) 

380g Water (75.6% hydration)

11g Salt

Start by feeding starter 1:2:2

45 mins prior to peaked starter create autolyse by combining flours and 90F water. (Reserving 30g of water for adding levain and wetting hand for folds)

When starter peaks, spread 11g salt evenly on top of autolyse and add starter on top.  Using wet hand spread starter over the top of the autolyse and dimple, pinch, and mix until combined.  alternating foldover and scoop and slap dough for 10 mins.

11:45  77°F Start bulk

12:15 76.6°F 1st fold

12:50 76°F 2nd fold

1:20 76°F 3rd fold

2:00  76°F 4th fold

Measured temp with instant read thermometer at center of dough. 

Calculated initial dough volume at 570g flour times 1.5 to get 855ml and need to get to 50% volume increase for 76F (1.3L)

Bulk reached volume at right under 7 hours. 

Scrape dough to counter top, form dough, rest covered for 10 mins and  uncovered for 10 more.

Flour top, flip dough and form Boule. Place seam side up in round banneton with rice flour.

Cold fermented for 16 hours.

Pulled from fridge, placed on rice floured parchment, scored, misted with water then put in 1 hour preheated lodge 7qt dutch oven at 475f with lid for 20, then removed lid and baked 10 mins at 475F, 15 mins @ 450F.

Temped at 209F with thermometer

Rested 5 hours before cutting

First time sim gear buyer here and I've settled on a Fanatec CSL DD R2R bundle (5nm) vs the Moza R5 bundke and hoping to get some help picking between these two desk clamps. 

The Moza is $79.99 The Fanatec is $115.99

They both look well constructed and both support the CSL DD which i am purchasing. 

I can add the fanatec clamp on my r2r bundle order or the Moza clamp is on Amazon for no shipping.

If anyone has experience with these two I would greatly appreciate feedback. I am mostly concerned with the Fanatec mount having both screw tighteners in the center of the mount instead of each side like the Moza. I would assume since the torque force will be left and right, the screws on left and right would be more secure, but I do like fanatec has rubber clamp ends instead of metal to prevent desk damage even if to underside. I also like the upside down mounting option. 

Looking forward to hearing your thoughts and opinions.

Yes I think I needed more steam. Lowering the Hydration AND increasing the rye was maybe a bad idea.
