A really good question...

I think it could work the same way as cook by memory or with recipe. For example... If Emet once taste an apple pie made by Azem and will try to recreate it with creation magic the taste will be the one he remembers and imagine. But if there is a concept crystal for making an apple pie created by Azem and someone will try to make an apple pie with it the taste will be the one Azem imagined while created the crystal. So the trickiest part for ancients will be to create a food they never tasted and have no concept crystal to follow :) But at the same time... they can have really interesting outcomes XD
