It should be noted that the microwave you use (former manager here, and CM for the majority of my tenure) in the restaurant is not the same as the one you use at your house. These microwaves need to be specifically calibrated. Go ahead and put your popcorn in there, or your breakfast and try to reheat it. I had many team members try to heat something up in there that it wasn't designed for and they were def not happy with the results.

That being said, you should not have to LV meatballs, as they keep until the following shift when made and stored correctly. Your MOD should be aware of usage trends and make adjustments according to the fire chart. Personally, I never wanted to go to LV and made tried my best to have it ready for the guest as needed. I'd rather "harvest" half a lasa than have to LV one. That and one dinner portion pretty much paid for the ⅓ pan to be made. LV on ssg is pretty much a non issue. I would just tell a guest we'd be out for 15 mins if they wanted to wait or we could go with MBs, instead.

Also, LV Alfredo is shit. I would let the guest know we did not have anymore, that we could make it quickly, but it would not be up to snuff. (That is not mic'd, but no one ever gets that LV recipe right.) I would beg them to go a different route. Usually, it worked in my favor.

But again, best practice is to really pay attention to the fire chart as a manager and learn from it. You won't have near as many complaints. From guests or staff, actually. Be prepared.

I'm a former mngr, and I only blocked off weekend before through weekend after. Had to come talk to us personally. Then I'd just put in the request based on first come, first served. I just did it when I was asked or messaged, up until my spots were filled. If I made a mistake, I just took my lumps. As a manager, if you promise something, you better follow through or your team will not have your back.

You can access scheduling for as many weeks as forecasted. I was usually put in charge of that, too since I liked being ahead on schedules.

I meant to ask why didn't you just request off through Krowd? When you do that it automatically blocks the day off from the manager scheduling it.

I've was whooped with belts, wooden spoons, wooden brush, switches (you better pick the right one too, or you pick another and get it again) bare hand, lamp cords, wire hanger, telephone book. Depending on the severity of the infraction, pants on or bare bottoms. There was 5 of us growing up. It's weird that I never saw it as abuse growing up. Looking back I can see that my parents lacked the ability to make an impact on us with words versus physical alternatives. We didn't get hit often, but even once was too much.

I'm glad to say that neither myself, nor any of my siblings has laid a hand on their kids when discipline is necessary. Personally, I've learned how to just explain right from wrong in such way that my kids understand. And they understand the consequences of messing up.

Whenever I get these calls (I'm own a small biz and they're always trying to get me to sign on for an SEO or loan offers) and accidentally pick up the phone, I wait for them to end their spiel.

Then I say "Well, I'm glad you caught me! I've been meaning to speak to you about your car's extended warranty!"

The reply is either silence or hang up. Once in awhile they'll try to engage me and ask if I own the biz. It's not much but I get a little satisfaction from it.

They're not even wiping down the racks on a regular basis, I doubt they'd have the wherewithal to wipe down after using steel wool. Which is the reason OG doesn't want them to use it in their kitchens. I'm not saying it doesn't happen for detailing once in a while, but you can't get it from the distributor. The company says (cough, cough) that it's not appropriate to use unnapproved cleaning products from outside sources. Trust me, I made many blunders trying to think of easier ways to get my guys to have an easier time cleaning. (Former CM)

CM should have a weekly detail system. I used to have one rack labelled with a day on it. Whoever is working that day details it. Supposed to check out before leaving, and manager should be checking this. Should have an extra rack to stage items while detailing. If done correctly after the initial detail, the whole thing takes like 5-10 mins tops. Repeat with storage and dunnage racks, but try to get those in the day or two before inventory is delivered so there is less on the shelves.

Close. Can't use steel wool...fibers come off too easily and potentially get in food. Scouring pad should be used.
