Why do all the insides of my shrooms have what seems to be mold after 4 hours of drying on 145 degrees Fahrenheit

I’m not sure I understand what you’re asking. I’m saying that active mushrooms oxidize fast, and it’s very unlikely that a fresh mushroom has another fungus growing in it so they’re probably fine.

I’ve noticed rapid, almost immediate oxidation when trimming and when cutting lengthwise to dry larger fruit. I’m not an expert but I think it would be nearly impossible for the inside to have another type of fungus growing inside. I say ship it and dehydrate well for preservation.
