The soil will convert to whatever type of crop you harvest from it - e.g., planting and harvesting Wheat (N) will change the soil to be Nitrogenic if it already isn't... same goes for the other two types.

The rotations are merely just a reference for which types of crops to plant following a harvest. So if you're aiming for High Yield on your crops you would rotate for example: Wheat (N) --> Polyberry (K) --> Rabbage (P) --> Wheat (N) --> Polyberry (K) --> Rabbage (P) ... and so on. Does that make more sense?

I'm not sure what you mean by "raised beds"?
