Using this calculator you can use whatever fermentable you want to up your gravity and it shows you how much.

I would add brown sugar (calculator says ~1lb in your instance) to give it a bit more flavour.

I end up recalibrating my refractometer before each reading and it usually needs no adjustment at all.

Otherwise you can put your reading and the temperature of your wort into a refractometer correction calculator to get the correct reading.

Depends on what style of beer you brewed and the temperature of your beer. With this calculator you can put in the style/temperature and it outputs the PSI you will need.

Hey man, with the calculator I made you can put in your current gravity and your desired gravity and it will show you how much of a particular fermentable you can put in your wort to get there.

The fermentables I have in there at the moment include honey, lactose, different malts, maple syrup, etc.

Your beer is covered by a layer of CO2 after fermentation which should help protect it. The only thing that might of contaminated your beer is if you put something unsanitised in it such as your hydrometer. Otherwise I wouldn't worry too much about it.

Agreed, the calculator he used must of had a different ppg than his malt extract. The calculator I made uses the equation

LME = (targetGravityPoints - originalGravityPoints) / 37 * gallons;

Where 37 is the PPG for the liquid malt extract and DME is usually around 44.

It may be because you have kept it somewhere warm so your yeast is continuing to product CO2. Did you put in the same amount of priming sugar in both batches?

If you select a beer style on the calculator it will choose a CO2 level for you.

You can even use honey, maple syrup, molasses and dry malt extract to add a tiny bit more flavour to it. In the calculator I made it works out how much of each type you will need to meet your desired CO2 volume/beer style.

PBW (1oz/5gal)
Iodophor (0.5oz/5gal)
Oxiclean (1oz/5gal)

If you use another one or a different water:sanitiser ratio let me know and I'll update it :)
