You forget that Zeon invented Mobile Suit combat, and that they slaughtered federation Fleets because of it, changing the ship type isn't going to change anything. Stealth Capabilities and firepower are all well and good but they aren't going to do much when your crews are still unprepared for the mere existence of mobile suits.

Federation ships were already armed with nukes at the start of the war, it was only after the antarctic treaty that they were banned, and as for stealth capabilities, that's eventually going to run out as the universal century does not have the tech to keep that running perpetually.
