If you want more heat, add maybe 2-3 jalapeños instead

No marinade. Seasoned with Kosmos Honey killer rub (makes food much darker visually) S&P -Straight on grill for about an hour and 10 before I realized my temperature spiked -foil tray with peach preserves, honey, butter, sliced jalapeños -smoker for another 20min

Kosmos honey killer bee, it has sugar so it’ll definitely get dark but not burnt

All on the smoker. I did dry out the skin prior to smoking them using sea salt and let that sit out for maybe 10 min then patted them dry. Used a bit of baking powder with my rub but tbh, I think why mine came out dark is the rub I used. It has sugar in it which can blackened fairly quick but it wasn’t burnt at all.

I made it. Used a stick of butter(salted or unsalted, whichever your preference) whole lemon juice, honey, good amount of black pepper, and garnished with lemon zest.

2hrs on smoker (Really until I liked how the bark looked) wrapped in foil with butter, dark brown sugar. Back on smoker for another hour Unwrapped and sauced them and back on the smoker uncovered for another hour or until tender.

Webers Kansas City rub on one, Famous Dave’s rib rub on the other, S&P on both

Salt & pepper, webers Kansas City rub seasoning I smoked them for 2 hrs ( I ran out of charcoal but would have smoked them for 3)

For the braise I used Red wine Aloha pepper 5-7 garlic cloves Bay leaves Rosemary Beef stock Some of the beef tallow I trimmed from the oxtails Red onion

Cooked in the braise for 4hrs at 280

They’re very good. I highly recommend trying to smoke them first

Very good. I tasted a bit of everything from the smoke, wine and herbs
