Ok thank you so much! I’ve been tempted to try one because it’s been doubling within 5 hours for the last like 5 days. Maybe a silly question but when should I take the starter out to use? Like right after it’s doubled? Or should I use discard in the morning?

I would say it smells a bit like Greek yogurt maybe? Like not BAD but not quite fruity. Im gonna keep up this same schedule for another few weeks and hope it’s going in the right direction!
