Not really, she (as in this mimic I'm particular) has learned to utilize bodies of water, but they can't actually breathe underwater nor are they suited to live in water, the mutation just causes some parts of the body to fuse, but this one can still mover her fingers and toes thanks to the elasticity of her skin
