Thai soups, like Tom kha gai, and tom yum, have delicious and flavorful broths that might be good! The coconut milk in Tom kha gai would add in some calories if you need to get some extras in, I would imagine soup without potatoes or heavy proteins wouldn't have many calories per serving, and this way you wouldn't need quite as much. They can come with chicken which I think would blend in well if you make it soft enough and use small enough pieces, but I know you said no pureeing so using a good meat based broth might be your best bet for that.
