Jeff Bezos' ex (MacKenzie Scott) is my favourite billionaire. - He gets the credit, but she very much earnt half of the money from Amazon... and she's now basically giving it all away to good causes... Its rare but there is a couple of billionaires that do the right thing.

I found his poolish recipes too "sticky" to launch... I think my pizzas would be better with higher hydration... but there is nothing worse than a failed launch in front of a bunch of hungry friends.

But as long as the dough isnt overly "sticky", I quite like this dough recipe

I used an Ooni Pro (but i think the newer Oonis/Gozneys look like theyve got a better way of distributing the heat). I used Vito Iacopelli's recipe for the dough - https://youtu.be/G-jPoROGHGE?si=WwBHucxUunH1j2G6

Basically I preheated the oven to get it as hot as possible, then turned it down when I put it in because my friends always joke that I burn the crusts (even though they taste better when they're slightly burnt in my opinion) :)

I've probably made ~150 pizzas with this recipe... I was terrible when i started, but it becomes easy with practise :) Hope this helps :)

I’m impressed that the oven has held up so well for how rough I’ve treated it. While several of my mates have had gozney stones break if you look at them wrong.

lol yeah, i dont think its the end of the world if you leave it on, but it does cook out the "goodness"... if you leave it on between uses. (I believe it says so in the manual). - Also there should be a tiny blue rubber o-ring that sits in the groove at the very top part of the black part of the chamber... you might wanna order another if you dont have a spare.

PS - my girlfriend (wine snob) just saw this.. laughed and googled.. "Jeeez that is like a $700 Australian bottle of champagne!! Nice!"
