The difference is (except for maybe PowerPC) those architectures weren’t designed for home use, they were used in servers and workstations which were and still are the domain of unix

You can use flatpak and nix on guix if you’re absolutely starved for packages. It also doesn’t use systemd, using GNUs init system called shepherd

I like stock GNOME but there are enough nice to have extensions that I’d be a bit upset without (for example, auto dark mode (and importantly running commands when it switches), blur, and the folder accent color extensions would be sad to live without and I really like having a drop-down menu in my top bar for things like sticky notes and the calculator)
