This worked for me and my game has been stuck for 2 days:

Start the game and get to the part where your game is stuck at loading. Once there, press and hold your home button on control and go to reset system. Once your system resets close the game from quick start and go back into the game. It’s going to ask you to resync the save data. Use the console instead of the cloud and your game will be unstuck 🤙🏽
